Fire Equipment & Systems COMMERCIAL COOKING EXHAUST DUCT INSPECTIONS Kitchen exhaust cleaning is a multi-step operation designed to clean all of the system components to bare metal. This operation must be planned in order to clean each component thoroughly while protecting surrounding areas, by working from the top down. Safe Work Practices Protect workers by disconnecting/LOTO electricity to the exhaust systems. 

A variety of cleaning equipment and supplies (de-greasers, brushes, sponges, etc) should be on hand. It is highly recommended to coordinate the cleaning of the kitchen duct work with the Fire Safety Group, electrical and HVAC contractors. The following is a typical list of exhaust cleaning procedures for each hood: 

1. Erect a waterproof tarp underneath the hood in order to collect waste water and grease coming down the stack. The tarp must be securely fastened along all edges, in order to protect cooking equipment and surrounding areas. The tarp must be structurally supported or braced to handle the expected amounts of waste water. 

2. Remove filters and drain cups from the hood. Clean these components down to bare metal by soaking with chemical de-greasers and then rinsing with high-pressure water. Try to remove any thick grease first, and dispose of grease properly. 

3. Clean the roof exhaust fan inside and out, down to bare metal, using chemical de-greasers and then rinsing with high-pressure water. The exhaust fan may need to be partially disassembled in order to clean fully. 

4. The exhaust stack is sprayed with chemical de-greaser and then rinsed with high-pressure water. Remove exhaust duct access doors as necessary to clean and inspect the interior of the exhaust stack. 

5. The plenum and interior of the exhaust hood are sprayed with chemical de-greaser and then rinsed with high-pressure water. 6. Allow the hood/stack/fan system to fully drain and then dry by air.

Restaurant-Kitchen-Exhaust-Cleaning-Inspections

Every year in the United States there are over 8,000 eating establishment fires, with most of the fires originating from the commercial cooking area.  This is too often due to exhaust systems that are neglected after installation, which only increases the risk of a more damaging and dangerous fire.While proper maintenance of the kitchen exhaust system is the owner responsibility, NFPA96 requires regular inspections in order to determine if a system has gone from acceptable to dangerous.  

When you’re inspecting a system, ever have that nagging sensation that you may have missed something?  We’re not talking about leaving your keys on the table, or the bathroom light on, so in order to ensure a thorough and proper inspection, it’s good to have a list to keep from forgetting anything. This safety article is provided to ensure that authorities having jurisdiction (AHJs) are aware of all aspects of a commercial kitchen exhaust system that should also be on your checklist.As you go through a site, check items off and ask questions: When was the system last cleaned? 

Can I see the fan?  Is there grease buildup? Is there horizontal duct work?  Your inspection can mean the difference between life and death. However, the scary truth is that your checklist might not be complete, and that could lull both you and the owner into a false sense of security.

The International Kitchen Exhaust Cleaning Association (IKECA) is committed to ensuring that your next inspection is your most thorough inspection ever.  IKECA is a professional, non-profit organization committed to fire prevention and life safety by promoting kitchen exhaust cleaning to a higher standard.  While local governments can find adoption of newer codes problematic due to a lack of funds or staff, IKECA members follow the latest version of NFPA 96, The Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations, and we want to share some of that knowledge with you.

Let the Inspection Begin!The first place to start is with the establishment documentation of cleaning.  This should include paperwork detailing the date of the most recent cleaning and frequency along with any deficiencies the cleaning company may have encountered and may include photo documentation.Keep in mind when inspecting exhaust systems is the type of cooking equipment used.  NFPA 96 provides guidelines for inspections based on specific kitchen operations.  

Systems that utilize solid fuel, like wood, charcoal, and pitch, should be inspected monthly.  High-volume cooking operations, like 24-hour char-grilling, frying or wok cooking sites should be inspected quarterly.  Moderate-volume cooking operations like banquet halls should be inspected semi-annually.  Low-volume cooking businesses, like churches, day camps, and senior centers, need to be inspected annually.  

NFPA 96 also requires that if a system needs cleaning, it should be done by a certified exhaust cleaner acceptable to the authority having jurisdiction (AHJ).  Standards also require that a sticker, usually found on the hood, should display the name of the cleaning or servicing company, the name of the person who performed the work, and the date of the system last cleaning. The Hood: What Lies Beneath Perhaps the most overlooked area in a commercial kitchen inspection is the exhaust system.  

Vapors carrying grease can compromise the exhaust system, and one wrong spark can allow a fire to travel from the frying pan and into the building.If a hood’s exterior looks dirty or if there is a heavy accumulation of grease, it does not necessarily mean the system is not regularly cleaned  remember, it depends on the cooking style surroundings of the site, although it may indicate that the system requires more frequent cleaning.As you inspect the hood, make sure to look beyond the obviously visible system elements by removing the filters and looking at the plenum area.  

This area is usually a good indicator of how the rest of the system looks inside, as it accumulates the grease-laden vapors and directs it further into the duct work. The filters should be made of steel or a listed equivalent material, and should be removable for cleaning.  There should not be any gaps in the filters or missing filters, but if there are, this problem might have been created by the establishment’s kitchen staff; however, that is also usually a good indicator that the system is need of some serious cleaning.  

Duct work:  The Path to Safe Haven or Home to a Fiery Future  external portions only account for about 25-30% of the exhaust system, so a thorough inspection must be of the entire exhaust system, beyond the hood and into the duct work and fans.  Therefore, another item to inspect while looking into the plenum area is trying to look past it and into the duct work.  

Duct work is crucial to carrying those vapors out of the cooking area, although in the event of a fire, the duct should be able to contain the fire and prevent the flames from escaping into the building.Generally found at the top of the plenum is the entrance to the system duct run, often called the “throat.”  

There may be more than one throat depending on the size of the hood and each one should be inspected as the equipment used under each location varies and determines the amount of grease that is generated.  A flashlight should be used to look from the plenum area up into the duct collar or throat of the duct.  

Remember that the ideal situation is to have a clear view of the fan blades that help carry the vapors away.  If you can only see steel and grease, that may be the sign of a serious problem.Determining the rate of fuel accumulation and how often a system should be cleaned is crucial.  Using a tool such as or similar to the IKECA Depth Gauge Comb can provide an organized and specific method to determine the rate of grease buildup.

If a system established cleaning frequency is questionable, take photo validation of the duct area and equipment during the visit using a gauge comb to determine if the system is at or above the cleaning-required depth of 0.078.” If the ducts are found to have above that level of buildup, verify the last cleaning date and recommend that they contact their certified exhaust cleaners and schedule a cleaning. 

Also discuss with the owner that they consider changing how frequently the equipment is cleaned.As for the ducts themselves, according to NFPA 96, they must be a liquid-tight, continuous external weld so that any potential fires are contained and safely conveyed out of the building. Ducts must also be constructed of and supported by carbon steel at least 0.054 inches thick, or with stainless steel at least 0.043 inches.  

Ask if the owner or person responsible knows the construction and parameters of their duct work. Access Doors:  Getting In So Fire Doesn't Get Out According to NFPA 96, access doors must meet the 1500 degree (Fahrenheit) rating and be grease-tight.  All access panels to the duct work must also comply with the following standards set down by NFPA 96:  Signage that reads 

“Access Panel Do Not Obstruct” Openings at the sides or top of the duct and at changes of direction.  Hoods with dampers should also have an access panel to allow for inspection and cleaning within 18 inches of the damper.  With horizontal ducts, look for at least one 20 x 20 inch opening to allow for entry; although if this is not possible, then there ought to be openings large enough to enable access to clean every 12 feet along the duct work.  

If the duct is vertical and personnel entry is impossible, access to clean the interior ought to be provided on every floor.  Some ducts might be difficult to access, however they still need inspection, whether they span 5 feet or 50 feet.  A lot of grease buildup in the duct work is fuel for a future fire, and leads to significantly greater damage.Inaccessible ducts pose the same problem, if not a greater one.  

If no one knows where the access door to the duct is, that is a red flag that the system is not undergoing proper cleaning or perhaps has never been cleaned after installation.  Regardless of the duct work length, find out where the access doors are and open them for a thorough check.Systems that feature a rooftop fan should open from the fan on a hinge, allowing for an easy point of access to look at the conditions of the duct work.  If there is no hinge, and the fan cannot be opened, find out how and if the system is cleaned, and ask for proof.

What-Restaurant-Owners-Should-Know-About-Kitchen-Hood-Cleaning


As a kitchen exhaust cleaning (KEC) contractor, some of my time is spent educating customers on the proper ways to clean kitchen exhaust hood systems. 

I have found many restaurant and building owners simply don't know what is required of them, or don't know what is considered a properly cleaned kitchen exhaust hood system. In many instances, owners are led by unqualified contractors to believe that cleaning the hood and attaching a certificate of cleaning is sufficient enough to keep them in compliance with authorities. 

Unfortunately this lack of knowledge comes back to haunt an owner when a fire occurs. A proper cleaning of the entire kitchen exhaust system includes the hood, filters, fan and all associated horizontal and vertical duct work. 

I refer customers to the NFPA-96 Standard (National Fire Protection Association Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations 2011 edition) that provide the minimum fire safety requirements (preventative and operative) related to the design, installation, operation, inspection, and maintenance of all public and private cooking operations. 

The more owners know and understand what is required, the better they will be able to select contractors that will provide the proper service and better manage their fire protection.

Some of the most frequently asked questions I get from restaurant and building owners are as follows:


Question #1:
As an owner, what is my responsibility in regards to cleaning the kitchen exhaust system?


Answer:
According to NFPA-96 section 4.1.5: "the responsibility for inspection, testing, maintenance, and cleanliness of the ventilation control and fire protection of the commercial cooking operations shall ultimately be that of the owner of the system, provided that this responsibility has not been transferred in written form to a management company or other party."

In other words, it is the owner's responsibility to keep that system clean of grease and particulate buildup, and reduce the risk of a fire hazard. An incomplete cleaning performed by a low priced contractor (with most likely inadequate insurance coverage) will not protect the owner from the cost and litigation of a fire.


Question #2:
How often should my kitchen exhaust hood system be cleaned?


Answer:
According to NFPA-96 Standard section 11.4 the "entire exhaust system shall be inspected for grease buildup by a properly trained, qualified, and certified person(s) acceptable to the authority having jurisdiction and in accordance with Table 11.4."

Question #3
What is considered clean?


Answer:
The industry standard is to clean to bare metal. If a system has not been cleaned properly for any length of time, sometimes it may take multiple cleanings before getting to bare metal. According to NFPA-96 section 11.6.2: "Hoods, grease removal devices, fans, ducts, and other appurtenances shall be cleaned to remove combustible contaminants prior to surfaces becoming heavily contaminated with grease or oily sludge."

The best way to determine if a surface is clean is to inspect it. If it looks like there is an accumulation of grease on a surface, then it probably needs cleaning.

Question # 4:
Why do I need access doors, and why weren't they originally installed in the system?


Answer:
The most effective and efficient way to clean kitchen exhaust systems is by accessing as much of the system as possible. In order to reach parts of the system including horizontal and vertical duct work, openings must be installed to clean these areas. Sometimes at the construction of the exhaust system, the proper amount of access panels needed to maintain the cleanliness of the system may not have been installed. In many systems, doors or panels were installed, but were inadequately sized to provide adequate cleaning. For example, it is extremely difficult to clean an 18" x 18" duct through an 8" x 8" opening.

NFPA-96 sections 7.4.1 and 7.4.2 recommend installation of openings large enough to permit thorough cleaning at a minimum of every 12 feet of horizontal duct work and on every floor of vertical duct work. It is also necessary to have access doors at every change of direction.


Question # 5:
What documentation do I need?


Answer:
The following documentation required by NFPA-96 sections include: 


11.6.13 "When an exhaust cleaning service is used, a certificate showing the name of the servicing company, the name of the person performing the work, and the date of inspection or cleaning shall be maintained on the premises." 

11.6.14 "After cleaning or inspection is completed, the exhaust cleaning company and the person performing the work at the location shall provide the owner of the system with a written report that also specifies areas that were inaccessible or not cleaned" 

11.6.15 "Where required, certificates of inspection and cleaning and reports of areas not cleaned shall be submitted to the authority having jurisdiction."

Many KEC contractors provide reports showing pre-post cleaning photographs and other observations and recommendations important to your system. In-depth reports and certificates of completion will provide owners with documentation necessary for insurance representatives, fire marshals, and other authorities having jurisdiction.

NFPA 96 Code 11.6.1 Requires It.

11.6.1 Upon inspection, if the exhaust system is found to be contaminated with deposits from grease-laden vapors, the contaminated portions of the exhaust system shall be cleaned by a properly trained, qualified, and certified person(s) acceptable to the authority having jurisdiction.

Hood Cleaning is better than any other contracting type of work because it is a requirement. The grease from cooking builds up in the system until it becomes a dangerous fire hazard.

The grease is flammable and so it is best to remove it using de-greaser and hot water under pressure to thoroughly clean and remove it. If a system is inspected by a Fire Marshal and found to have too much grease he will order them to have it cleaned or face fines.

According to the National Fire Protection Association Standard 96 the hood system needs to be cleaned by a properly trained and certified professional.

One major reason for this is so that restaurant owners do not send their own personnel in to clean it because it is unlikely to get cleaned effectively.

Another reason is so that unqualified people generally, even contractors, don't attempt to clean it when they haven't been properly trained or certified.

Reason #2 - It's Repeat Business
The NFPA 96 requires the grease to be cleaned regularly.

The NFPA requires that the grease gets cleaned with regular frequency to prevent dangerous buildup. Depending on the volume of cooking (i.e. how busy the restaurant is) determines how frequently it should be inspected for grease buildup.

When the grease reaches 2000 microns it is time for a cleaning. Most hood cleaning companies simply clean the system regularly according to this grease buildup, usually once per month, every three months, or every six months. Nursing homes, schools, and churches can get by with a once per year cleaning.

Because the grease is required to be cleaned on a regular basis, this means repeat business for you. Contractors generally have no idea when or where their next job will be.

Hood cleaning gives you the opportunity to forecast your budget and know exactly how much money you will make months down the road because you will know each restaurants cleaning schedule.
Reason #3 - It's Recession Proof
Your service will be necessary even in a slow economy.

People will always continue to buy food even when the economy is slow. Restaurants are not going away. In fact, they are steadily on the rise, popping up everywhere.
